Indian Tacos

I’ve missed several days of posting – we have been eating at home, I have just been too busy to post.
Tonight, I made puffy tacos – courtesy of Pioneer woman. The puffy taco base is really quite easy to do, and makes excellent toast substitute to hold Jelly.
Taco base:
Mix self rising flour with enough water to just hold it together (3 cups flour, 1 1/4 cup water). Roll into small balls (about a lemon), then flatten as thin as possible. Fry about a minute on each side, cook to golden brown.
Top with taco meat, queso, refried beans, shredded cheese, sour cream, diced vegetables – whatever you like on your tacos.
Yummy, and a nice change.
We love fry bread here. My boys like the crunchy and chewy texture.
